Treat Yourself Tuesday!!

  Tuesdays are for treats...or so we like to say!  Today we are featuring the delicious ice cream cone cupcakes we made for our two year anniversary party.  Whether it's for a birthday, celebration or just a night in with the girls, these were the perfect tabletop decoration!  Not only were they a fun centerpiece to our display, they were very easy to make as well.  Below we listed step by step instructions so you can make these festive treats for your next party! You can make the cupcakes with any cake mix you prefer.  Since we were celebrating our birthday, we chose Funfetti!  There are different size ice cream cones, the easiest size to manage is the original (X-Large was the other option at the store). One box of cake mix makes about 20-24 ice cream cone cupcakes.



Preheat oven to 350 degrees and place your first round of cones in a muffin pan. 



While the oven is preheating, begin making your cake batter simply following directions on the back of the box.


After your cake mix is ready, start filling your cones!  Only fill two thirds of the cone to leave room for them to bake and so they do not overflow.


Place in the oven for about 16 to 18 minutes, carefully watching during the last 2-3 minutes.  When the tops begin to appear light brown in color, remove from the oven.


Place on a cooling rack and put your next round of cupcakes into the oven.

After all of your cupcakes have cooled down, you can start frosting and decorating!!  We chose to make a simple buttercream frosting. (See ingredients and instructions at the bottom of today's post.)


When you finish making your frosting, transfer it into your prepped cake decorating bag.   (We used a disposable decorating bag, standard coupler, and a No. 12 round decorating tip from Wilton)


Swirl frosting around to give the look of ice cream on the top of your cupcake cone.  Decorate with sprinkles or whatever topping you like on your ice cream!

Buttercream Frosting:

You will need:
1 1/2 (3 Sticks) Unsalted butter, cold.
5 C Powdered sugar
2 1/2 tsp Vanilla extract
2 tbsp Heavy whipping cream

Instructions:
1.  Cut butter into pieces using paddle attachment for mixer, whip butter for 5-7 minutes, scraping down the bowl occasionally until the butter looks light in color.
2.  Add 2 cups of powdered sugar and mix until incorporated into butter.
3.  Add 2 tsp vanilla extract and mix.
4.  Add additional 2 cups powdered sugar and continue mixing on low speed until sugar is incorporated.  Increase speed to medium-high and mix for 3 minutes.
5.  Add last 1 cup powdered sugar along with 2 tbsp heavy whipping cream and 1/2 tsp vanilla extract.  Beat on low until ingredients mix together.  Increase speed to medium-high and beat for another 3 minutes to whip additional air into the frosting.
